Short post. Life is busy....
The first spinach of the season (pictured above) came from thinning one row of the spinach-planted bed I blogged about HERE.
Fresh. Sweet. Delicious.
I have always liked spinach, and I had never made it, other than the way my family grew up eating it. Cooked fresh, drained, and smothered in butter, s&p. Today I can say, that I have found so many different ways to use it, that it has turned into an amazing vegetable, that we enjoy so much more. I have found that the baby size pieces your showing here, are just fantastic in an omelet with onions and cheese, on a sandwich, and of course in a salad. If you asked me even a few years ago, if I would put spinach on a sandwich or salad, I would have thought you were nuts. I'm so glad that I'm learning to try just about any veggie, in just about any way now, and boy the benefits are just Outstanding! mmmmm
