We are a Messianic Jewish family, and since Yeshua (Jesus) was Jewish, and He is the King of the Jews, that all people who are His followers are grafted in to Israel as Jews as well. This is hard for many people to believe (especially because most Christians love pork and shellfish, a no-no in Judaism)-, but that is our faith. <br />We have too many roosters per hen right now, and are learning to process the excess ones as humanely and with as much dignity as possible. We love our chickens like our little feathered babies because we have hatched and raised most of them. We have learned about Shechita, which is the Jewish way if slaughtering, and it is very similar to the way you describe. We say a traditional Hebrew prayer (you don't have to pray in Hebrew, you can pray in your language) blessing God and thanking Him for this animal who is sacrificing its life to give us life (like our Yeshua). Since we are not to eat blood (it is listed in Acts), this technique is the best way because all of the blood drains out of the animal. It also kills the bird instantly, so they do not suffer. So even though they are jerking around, the movements are involuntary muscular contractions. After plucking and evisceration, the last step is salting and rinsing to remove excess blood.<br />We applaud what you are doing and thank you for posting this information which is helping newbies like us. She is responsible for feeding and taking care of the the chickens and will then choose 3 to go to fair, be judged and auctioned off. The judging is based on 'market quality' of the 3 chickens she chooses. She has learned a lot about how chickens grow and develop. She really enjoys raising these chickens and her younger siblings (sister age 7 and brother age 4) can hardly wait until they are old enough to raise their own chickens rather than just being helpers. We too have chickens for eggs and some are pets, but the kids know the market chickens are for meat. They actually refer to them as 'the meat chickens'. After fair we process the remaining chickens ourselves. This has been something we have learned as a family since neither me nor my husband grew up processing backyard chickens. I'd like to thank you for the information you have provided. I found your website based on my search for the process of scalding the chickens to remove the feathers. We do all this by hand and last year we had quite a bit of skin tearing during the process. As I've realized now, it was because of several factors; water temp too high and in the water for too long. Last week we processed our remaining chickens and had greater success than last year. All of our kids helped by either catching the chickens in the tractor or plucking feathers. They all laughed when 2 of our chickens 'jumped' out of the killing cone and ran around after their head had been taken off. Though taking a life is not to be taken lightly we believe it is important for our kids to know where our food comes from and the effort it takes to eat healthy meals. I'm both. I'm also a woman raising two kids whom I adopted as a single person. We live in the woods of Montana and are overjoyed to see wildlife of all kinds, raise various animals -- some for pets, some for help, some for meat. My daughter raised a pig and a lamb for 4-H, and though she never said a word, was very hurt when they were taken away to the slaughterhouse after the sale. Even though she made good money selling them (way more than the market rate), she's decided not to raise any more. But she's right in there when we butcher chickens, at least on the plucking end. (I'm just now building a Whizbang picker.) And she has no problem raising and killing and eating meat birds (which are unlike layers in every way, including intelligence.) This year she took hunter safety, at 11, but after the class told me she wasn't going to hunt. Maybe in a year or two she'll change her mind. <br />My son at 12, shot his first deer and cried. That was a better response, in my opinion, than jumping up and down for joy. He realized the gravity of taking a life. But he hasn't stopped hunting, and has killed a deer each of the last two seasons. We also butcher at home. He has raised egg chickens for six years with 4-H and was happy last year to sell a layer pen (3 layers of the same breed) at the sale, so he didn't have to think about them going for meat. But this year, it's 3 turkeys, as a meat pen. But when we don't have homegrown chicken in the freezer, and go to the store, he requests that we don't get chicken. Because he likes chickens so much! <br />I grew up eating wild game but because I was a girl, was never taken hunting by my dad. I had to teach myself when I was in college because I couldn't afford to buy meat. But a $20 deer tag, and a 10 mile trip out of town could procure me 40 pounds of meat. I still hate killing deer, but I do it because I have chosen to be a meat eater. Maybe someday I will change my mind, or decide, like my dad did, that I've done enough killing, and maybe it'll be time to build a greenhouse so I can grow veggies in this clime. <br />I have friends who are dedicated vegans. I have friends who can't think of anything else but hunting season for 6 months a year -- though it's the hunting, not the killing they desire, I think. I've had many young women approach me and ask that I teach them to hunt, because they want to be more self-sufficient. I've had many young men approach me and ask me to teach them to butcher properly, because they don't want to take their game to the processor and have it treated poorly. <br />So there you go. Its been some years since this posted but...Herrick,<br />Its been some years since this posted but I just read it after searching for 'how to's" in processing chickens. Im not sure if its for a process for me or not but not because of any issue with the cutting of the neck arteries. My family hunted quite a bit when I was a kid. Not unusual to see deer hanging in the garages around town, men gathering and making fun of each others deer. None of it, in my opinion, was disrespectful to the deer. Just people socializing during a common activity/chore and enjoying each others company. I appreciate your posts... best wishes to you and your family.
